This experiment aimed to describe the influence of production system on the following characteristics from seven
Spanish goat breeds: carcass weight, dressing percentage, head weight, viscera weight, kidney fat weight, fatness score,

The effects of breed and slaughter weight on chemical composition, fatty acid groups, texture, and sensory
characteristics of meat of 141 suckling male kids from 5 Spanish breeds were studied. There was a decrease
in texture and lightness and hue angle with the increase of the slaughter weight. Fatty acid composition was
correlated with the intramuscular fat content. All the breeds except MO had values of n−6/n−3 ratio below
4, which is the healthy limit recommended, and a low atherogenic index as well as a low intramuscular fat

Intramuscular, subcutaneous and kidney knob fat depot fatty acid profileswere studied in 104male suckling kids
from seven Spanish breeds: Blanca Andaluza, Blanca Celtibérica, Moncaína, Negra Serrana-Castiza, Pirenaica,

Twenty-two Serrana goats were studied through two successive estrous cycles in order to characterize their follicular dynamics during the breeding season. The ovaries of the goats were scanned daily by realtime ultrasonography and all follicles ≥3mm were measured and classified. the pattern of body development in grass-raised Churra Tensina lambs. Forty-nine single male lambs were slaughtered at
three body-weight intervals, according to the commercial categories of suckling (11.191.0kg), light (22.190.8 kg) and

Carcasses of Churro Galego Bragançano purebred and Suffolk and Merino Precoce crossbred lambs reared under

The lumbar joint, which is handled to assess body condition scores, was taken from 52 adult Rasa Aragonesa ewes with body condition scores between 1·5 and 4·5 and dissected into muscle, bone, subcutaneous and intermuscular fat.
