  1. Influence of breed, milk diet and slaughter weight on carcass traits of suckling kids from seven Spanish breeds

    This experiment aimed to describe the influence of production system on the following characteristics from seven Spanish goat breeds: carcass weight, dressing percentage, head weight, viscera weight, kidney fat weight, fatness score, carcass length, leg length, rump perimeter, rump width, kidney fat colour and tissue composition of shoulder. Experiment involved 201 male, single-birth suckling kids from five meat and two dairy breeds. Animals from meat breeds were slaughtered at two targets carcass weights (light, 4 kg; heavy, 7 kg).   2. Effect of slaughter weight and breed on instrumental and sensory meat quality of suckling kids

    The effects of breed and slaughter weight on chemical composition, fatty acid groups, texture, and sensory characteristics of meat of 141 suckling male kids from 5 Spanish breeds were studied. There was a decrease in texture and lightness and hue angle with the increase of the slaughter weight. Fatty acid composition was correlated with the intramuscular fat content. All the breeds except MO had values of n−6/n−3 ratio below 4, which is the healthy limit recommended, and a low atherogenic index as well as a low intramuscular fat content.   3. Fatty acid profile of three adipose depots in seven Spanish breeds of suckling kids.

    Intramuscular, subcutaneous and kidney knob fat depot fatty acid profileswere studied in 104male suckling kids from seven Spanish breeds: Blanca Andaluza, Blanca Celtibérica, Moncaína, Negra Serrana-Castiza, Pirenaica, Malagueña and Murciano-Granadina. Kids were raised in the traditional production system on mother's milk and slaughtered at around 7 kg live weight. Differences were observed between dairy (Malagueña) and meat breeds (Blanca Andaluza, Blanca Celtibérica, Moncaína, Negra Serrana-Castiza, and Pirenaica). Sensory attributes of toughness, juiciness, flavor intensity, flavor quality, odor intensity, fiber presence (stringy), sweet intensity, and overall acceptability were evaluated in 60 males and females allocated to 3 carcass weight groups: 4, 6, and 8 kg.     Twenty-two Serrana goats were studied through two successive estrous cycles in order to characterize their follicular dynamics during the breeding season. The ovaries of the goats were scanned daily by realtime ultrasonography and all follicles ≥3mm were measured and classified. The data were classified by the number of follicular waves per goat to test the hypothesis that temporal and morphological differences between the last follicular wave of an ovary, irrespective of ovulation, will affect the selection of the next ovulatory wave.     The present study was conducted to establish the pattern of body development in grass-raised Churra Tensina lambs. Forty-nine single male lambs were slaughtered at three body-weight intervals, according to the commercial categories of suckling (11.191.0kg), light (22.190.8 kg) and heavy lamb (32.092.9 kg). Non-carcass and carcass components were recorded and the half left carcasses were completely dissected. Lambs showed a low growth rate of main organs in relation to empty body weight (BW) (PB0.01). Variables of taste, texture, juiciness and overall acceptability were evaluated on 60 animals grouped by sex and carcass weight in 6 different groups.   15. Utilización de ultrasonidos en cabritos vivos de raza blanca celtibérica, como predictores de la composición tisular de sus canales

    Sobre diez cabritos machos de raza Blanca Celtibérica, se compararon seis medidas de espesor de grasa lumbar, 6 de profundidad del M. Longissimus dorsi (PMLD) y 3 del espesor de grasa esternal obtenidas con ultrasonidos en el animal vivo y sobre la canal.   16. Carcass conformation and joints composition of Churra Galega Bragançana and crossbred lambs by Suffolk and Merino Precoce sire breeds

    Carcasses of Churro Galego Bragançano purebred and Suffolk and Merino Precoce crossbred lambs reared under three different conventional production system of northeast of Portugal were evaluated. Carcasses of male lambs had larger muscle longissimus width (P < 0.05) and smaller subcutaneous fat thickness (P < 0.05) than the female lambs. Carcasses of crossbred lambs had higher (P < 0.05) compactness indices and leg and shoulder proportion than Bragançano purebred.     The relationships between body fat depots and body condition score (BCS) were determined in 52 adult Rasa Aragonesa ewes aged 10 (s.d. 2) years and ranging in BCS from 1-5 to 4•5.     The lumbar joint, which is handled to assess body condition scores, was taken from 52 adult Rasa Aragonesa ewes with body condition scores between 1·5 and 4·5 and dissected into muscle, bone, subcutaneous and intermuscular fat. The subcutaneous fat in the lumbar joint was highly correlated with total fat in the body (r=0·97), confirming the value of this region for assessing body condition in Rasa Aragonesa ewes.
